A Naples-based Neapolitan pizza baker says the traditional method there is scissors, not a wheel or knife, pizza served whole, quartered with shears, and eaten folded. The reasoning: scissors preserve the delicate, airy crust from the long fermentation, protecting the craft instead of crushing it flat.
