Another wholegrain that I'm known to eat straight from the pot, this freekeh (cracked green wheat that's been smoked), is similar to bulgur but so nutty and lightly smoky, so much satisfying depth. Grown on a regenerative organic and fair trade farm in Palestine.

“Freekeh is an ancient grain that we eat in Lebanon/Palestine/Syria/etc., I grew up eating it but never saw people eating it in the US & I think it’s because nobody sells it. I saw it at Cookbook in Echo Park maybe 5 years ago (or more). It’s naturally slightly smoky & really good when you cook it with zucchini, carrots or other vegetables. I used to eat it with leban (yogurt) & mint”
