This isn't a health rec, I'm not watching my sugar intake, I just genuinely think cookies (and other desserts) taste better when they aren't overwhelmingly sweet. Other people still compliment the end result (unaware of the cuts), which gives me confidence this hack does not ruin the recipes!!
Recent examples:
Double Chocolate Chip Cookies
Instead of 1/2 cup of brown sugar and granulated sugar.
I do 1/4 cup of each.
Honey Sesame Cookies
Instead of 1/2 cup of the sugars, I do 1/4 cup of each. BUT I keep the honey at 1/3 cup because its a main part of the flavor profile.

This works very well, especially with more toothsome flours. While other people rarely detect the reduction, after a time you will be surprised when you try other people's full sugar baking. Once you've gotten used to halfsies 'regular' will feel gratuitously sweet.

I do this too! Less sugar, and barely noticeable. I also double the amount of spices... like in gingersnap cookies. People go nuts for them!
