Kale because it'll hold up in the fridge for days, with lots of extras like baked tofu, roasted beets, crunchy cashews, etc. I love making one on Sunday and then filling up a bowl on weekdays for lunch while I'm working. Just makes me feel like I'm doing something nice for myself.
Putting mosaic tiles in sidewalk cracks
Seeing these in front of my house every day makes me so happy. It seems to delight many passersby too. I just filled the cracks with premixed cement and plunked in my mosaic pieces and let it dry overnight.

Letting your kid learn how to have an independent phone conversation
My almost 8-year-old had his first phone call with a friend the other day where they were trying to exchange mailing addresses. Listening to the two of them try to relay information felt like listening to two 95-year-olds talking on half broken walkie talkies. But I resisted the urge to intervene and they eventually figured it out. Witnessing the moment and letting it unfold felt really special.
