2 large heads of garlic (about 15 cloves) De-stem:3 bunches rosemary 1 bunch of thyme, sage, parsley, oregano, chive, scallion (these are both sliced thin before going in the food processor) Process garlic and rosemary first, mince well! Add the rest. As small as you can get them. This is two 2 boxes of maldon salt. DO NOT put the maldon salt in the processor, it'll turn into powder Spread it out on a baking tray and let it air dry until it's ready- usually about 2-3 days, giving it a good stir every time you walk by.
