Spinach & green garlic chicken patties with garlic mayo

I came across Dishing Up the Dirt when I was getting farm boxes from Moon Valley CSA, and it's been an indispensable recipe resource. Truly quick meals! Everything is veggie-forward and meaty enough to satisfy my partner, who won't even begrudgingly eat vegetarian food other than pizza. This is one of two (and only two) meals my 3-year old praised. She eats these patties on a bun with cheese and thinks it's a cheeseburger.

Stunning hibiscus, somehow native to Maryland! We just planted these in our front yard this year. Attracts bees and butterflies.
