My absolute favourite way to meal prep is by prepping a bunch of chicken salad for the week. Munching on a scoop with some crackers, plopping a dollop on top of some greens, or making a traditional sandwich - the world is your oyster. This particular chicken salad takes the cake for being perfectly tangy from the Dijon, herby from the tarragon (and dill if you’re like me and need to add dill to all mayo-based salads), and the caramelized onions - while a labour of love - are well worth it for the depth they bring. 12/10 recommend adding this to your weekly meal prep rotation.
